This also very ripe yet avoids being over the top with its liqueur-like aromatic profile of spiced black cherry, cassis and sauvage hints. There is both excellent volume and freshness to the dense and, somewhat unusually, more refined medium weight flavors that tighten up on the youthfully austere, complex and lingering finale. Drink from 2032+.

The 2020 Savigny-lès-Beaune Aux Guettes 1er Cru has a taut and crisp bouquet with black cherries, touches of menthol and violet, opulent yet showing more delineation than some of Pavelot’s other cuvées. The palate is medium-bodied with saturated tannins counterbalanced by a fine bead of acidity, lightly spiced with a cohesive finish. Very fine. Drink 2024-2040.
