Founded in 1988, San Salvatore is certified organic and has 23.5 hectares under vine.
Bright pale straw to straw colour with a touch of green around the edges and a watery hue. Jumping out of the glass are pear, lime and green apple scents followed by some wet slate and mineral notes. Mouth wateringly fresh and possessing an electric feel, the palate is layered with pear, lime and green apple fruits that are underpinned by crunchy acidity. Citrus and stony mineral characters linger underneath. Finishes dry and crisp with a long zippy aftertaste.
