Totally opaque black dark red colour with a dark red hue. Spicy plum and red liquorice aromas are followed by some maraschino cherry and earth notes. Ripe and juicy the palate features dark cherry, liquorice and dark plum fruits over vanillin cedar, infusions of fresh herbs and subtle peppered earth elements. Polished tannins with a fruity medium powered finish.
Drink over the next 1-2 years.

Matured 10 months in mostly 2yo French puncheons. The wine's title is definitely a clue to the savoury nature of this shiraz, touching on a light, smokey charcuterie character which is quite enticing. This is a wine that needs some swishing and some Italian smoked goods. Plum, bramble, earth, autumnal leafiness, herbs and dark chocolate in perfume. Takes off across the tongue with energy, well supported by supple but insistent tannins. Carries long and even. Drink by 2032.
