Domaine Simon Bize et Fils has to be one of the best kept secrets in Burgundy today. Famed for producing wines with impressive capacity for cellaring, under the care of Chisa Bize the wines are also more dynamic and show greater aromatic detail. The Domaine has some of the oldest average vine age anywhere in the Cote d'Or, and Chisa practices her amalgam of organics and biodynamics coined as "Bize-dynamics". Yields are kept low, and winemaking utilises a high percentage of whole-cluster fermentation.

The 2019 Savigny-lès-Beaune 1er Cru Aux Vergelesses is a striking wine, soaring from the glass with scents of wilted roast petals, bergamot, oriental spices, wild berries and plums. Medium to full-bodied, layered and multidimensional, it's vibrant and velvety, with lively acids and a long, perfumed finish. This is an immensely good Savigny from Chisa Bize and her team.

The 2019 Savigny-lès-Beaune Les Vergelesses 1er Cru has a sophisticated nose of blackberry, loamy damp soil, raspberry and light cracked black pepper aromas that build nicely in the glass. The palate is medium-bodied with fine tannins and a crisp bead of acidity; very harmonious. White pepper and clove appear toward a finish that leaves the tongue tingling after it has departed. Superb. Drink 2023-2040.

Slightly less dense purple, but correspondingly a more elegant and approachable nose. Medium weight of quite classy fruit then a drier finish as the stems kick in. Just a matter of waiting. Light liquorice notes. Good though.
