2019 Hill-Smith Estate Eden Valley Chardonnay

Around 30% of this wine was wild yeast fermented and matured, for a period of 7 months, in new and 1-3 year old fine grained French barriques to add weight and texture, with the balance fermented in stainless steel to retain fruit freshness and vibrancy. Texture was further enhanced through extended lees contact. Brilliant pale straw colour with a greenish tinge around the edges and a watery hue. Scents of white peaches and ripe nectarines are welded to subtle dried honey, light biscuity nougat and spice notes. Rich peach and nectarine fruits decorate the mid weight palate and provide it with a rounded mouthfeel. Some honeyed characters, delicate biscuit and spicy nougat follows on. Finishes with a lick of nicely balanced acidity which lends some freshness to the long aftertaste.
