Domaine Hubert Lignier is one of Burgundy’s finest addresses, producing wines that show profound depth, complexity, and structure with capacity for wonderful development in the cellar. Winemaking is quite traditional, with grapes being de-stemmed and fermented in open-top cement tanks with natural yeasts. Elevage is around 18 months for the Bourgogne and village wines, while the premier and grand cru wines remain in barrel for 20-24 months. All wines are bottled without fining or filtration.

The 2019 Gevrey-Chambertin 1er Cru Aux Combottes opens in the glass with aromas of cassis, plums, rose petals and spices. Medium to full-bodied, supple and charming, it's fleshy and enveloping, with a seductive, giving personality that belies its depth and concentration.

The 2019 Gevrey-Chambertin Aux Combottes 1er Cru is located just under Clos de la Roche but on free-draining sandier soils. This is one cuvée where I feel that the aromatics suggest some over-maturity, light tinned prune notes tincturing the red fruit. The palate is medium-bodied with a sweet candied entry, kirsch and orange zest, pretty on the finish but missing the intellect of other vintages of Combottes that I have encountered from Lignier over the years. Drink 2023-2038.

Planted 1957. 0.15ha has given two barrels which is a bit miserly. Sandy supple soil, Rich mid purple, dances across the palate, a touch of menthol here, brisk red fruit otherwise, quite ripe but picked in good time.

From a small parcel near the Clos de la Roche in this premier cru nestled amid the grands crus. The vines were planted in 1957 in thin soils and produce a wine of intense concentration. Somewhat slow to open, with time it reveals an intense concentration of red and black fruit, savoury, mineral notes and prodigious extract, with the tannic grip to carry the wine to a very long finish. Drink 2024 - 2039.
