Made from juice with extended skins contact and wild fermented in a large oak foudre. Brilliant pale straw colour with greenish tinged edges and a watery hue. Ripe lime and red apple scents have a subtle dried honey overlay with hints of quince and stony mineral notes in the background. Vibrant lime and green apple flavours are to the fore on the palate underpinned by traces of honeysuckle and stony mineral characters. Finishes dry and steely with crisp acidity and a focused medium to long aftertaste.
Drink over the next 5-6 years.

Vines planted '78 and '98, harvested by the sophisticated Opti grape sorter-destemmer, 4 hours in the Opti before pressing, thence to a 7yo foudre for fermentation, and maturation on lees. You'd better pay attention as you take your first sip - this is not your grandma's riesling. Unsweetened lime sorbet. Drink by 2030.
