2018 Simon Bize Savigny-les-Beaune Les Talmettes Premier Cru

Domaine Simon Bize et Fils has to be one of the best kept secrets in Burgundy today. Famed for producing wines with impressive capacity for cellaring, under the care of Chisa Bize the wines are also more dynamic and show greater aromatic detail. The Domaine has some of the oldest average vine age anywhere in the Cote d'Or, and Chisa practices her amalgam of organics and biodynamics coined as "Bize-dynamics". Yields are kept low, and winemaking utilises a high percentage of whole-cluster fermentation.

The 2018 Savigny-lès-Beaune Les Talmettes 1er Cru has a fragrant bouquet of harmonious blackberry, cranberry and bilberry scents, plus light sea spray/brine in the background. The palate is very well defined with succulent tannins, very fine acidity and a precise, persistent finish. Superb. Drink 2022 - 2036.
