Domaine Simon Bize et Fils has to be one of the best kept secrets in Burgundy today. Famed for producing wines with impressive capacity for cellaring, under the care of Chisa Bize the wines are also more dynamic and show greater aromatic detail. The Domaine has some of the oldest average vine age anywhere in the Cote d'Or, and Chisa practices her amalgam of organics and biodynamics coined as "Bize-dynamics". Yields are kept low, and winemaking utilises a high percentage of whole-cluster fermentation.

The 2018 Savigny-lès-Beaune 1er Cru Aux Vergelesses has turned out nicely, mingling hints of rose petals and exotic spices with aromas of sweet berries and forest floor in an inviting mélange. Medium to full-bodied, layered and multidimensional, it's deep and complete, with a muscular chassis of tannin and a rich core of fruit. Drink 2023 - 2045.

The 2018 Savigny-lès-Beaune Les Vergelesses 1er Cru is more backward than the Talmettes on the nose, but sports just as much precision and focus. The palate is medium-bodied with crunchy black fruit, firm tannins and good acidity that segues into a more elegant and silky-smooth finish, leaving a touch of sea salt on the aftertaste. Drink 2022 - 2038.

Same delightful purple colour but for the moment the bouquet does not want to appear. A bit more in reserve with a sweet dark density of fruit then some dry tannins. Needs more time to resolve but I think it will.
