Dense black core with a deep black dark red hue. Pronounced aniseed top notes mesh with black cherry, lightly smoked vanillin cedar, dried herbs and spice. Rich black cherry and liquorice flavours are cast over a back drop of smoky vanillin oak, scorched earth and spice. Ripe, slightly chewy tannins with a lush medium length aftertaste.
Drink over the next 4-5 years.

Prolonged cold soaking, open ferment, gentle pressing and 18 months maturation in French hogsheads. Typical cherry cola varietal aromas upfront, a hint of toffee and sweet-spiced stewed fruit in the mix on the bouquet. Juicy and soft on the palate with some savoury characters combining with the riper flavours, and gently persistent tannin to finish. Drink by 2025.
