A blend of 54% Semillon and 46% Sauvignon Blanc fermented with wild yeast and matured in a combination of new and second use French oak for 10 months. Brilliant very pale straw colour with a glimmer of green to the outskirts and a watery hue. Herbaceous grassy top notes are followed by gooseberry, citrus, freshly cut asparagus, lightly smoked cedar and flinty notes. Intense, racy fresh gooseberry and citrus flavours fill the mouth over a back drop of herbaceous grassy characters, asparagus, light pencil shavings and spice. Finishes dry with crisp acidity and a long aftertaste.
Drink over the next 4-5 years.

A 54/46% blend, the juices chilled pre wild fermentation, the wine held in a cool room at 12 degrees C for 10 months. The bouquet is layered and complex, the palate pushing flavours at kinetic speeds, taking hold of the mouth in an instant. Drink by 2023.
