Brilliant water like colour with greenish tinged edges. Aromas of lime, lemon and orange rind have a talc overlay with light oily steel like notes following on. Light and quite steely in its feel, the palate is subtlety flavoured with lemon, lime juice and granny smith apples. Wet steel and mineral characters sit in the background. Finishes very dry with crunchy acidity and a lime juice driven aftertaste.

Machine-harvested, pressed, no SO2, wild-fermented, 6 months on lees. Fermented to very low residual sugar (1.2g/l) its acidity is obvious and mouthwatering, and adds a bold swagger to the palate. Extreme length. Will richly repay patience. Drink by 2032.
