2018 Bicknell fc Applecross Chardonnay
Hand-picked, chilled, whole-bunch pressed direct to French puncheons for wild ferment over 3 weeks, SO2 the only addition, no stirring, no mlf. It has hastened slowly to its release in early '21. White peach/pink grapefruit/apple are the baseline flavours. Drink by 2028.

This is a layered, complex chardonnay, showing aromas of lemon and peach with such convincingly subjugated oak and astute, solids kick. Similarly poised palate, with very impressive tension between flavor, flesh and acidity. Holds so much interest. Drink or hold. Screw cap.
