2018 Ayala A/18 Le Blanc de Blancs Champagne
Airy, expansive and highly finessed with a satiny feel to the long stimulating finish.
Buoyant fluffy white mousse with a pale straw coloured base that has a fine persistent bead coursing through it. Wonderfully refined nose with aromas of baked bread, citrus, yeast lees, pear, delicate honeyed cashew and chalk flowing through the nostrils with plenty of intensity. Airy and expansive across the palate, highly finessed flavours of baked bread, yeast lees and citrus are featured over subtle cashew, pear and chalky characters. Crisp sculpturing acidity with a satiny feel to the long stimulating finish.
Drink over the next 6-8 years.

Always coming from the Grand Crus of Côte de Blancs, the 2018 Champagne Le Blanc De Blancs A/18 Extra Brut includes fruit from the Montagne de Reims. This was Julien Gout's first vintage with Ayala as Chef de Cave, and he added the extra fruit to give the wine a bit more depth. On the nose, it’s delicate and floral with its notes of white flowers, baby powder, fresh pear, and lemon candies. Medium-bodied, it has more intensity but remains all about finesse and elegance, with a delicate, rounded mid-palate, a pillowy, fresh mousse, a delicate structure that frames the wine, and a clean, stony finish, closing with a hint of spice. It’s another step in the right direction for this estate and very nicely done. Drink over the coming 10-15 years. Drink 2024-2040.

Lemony and pristine with aspirin-like tension. Light-bodied, showing superzesty tangerine flavors with bright fruit definition and good length. It might lack complexity at the moment but is poised to develop lots of energy, elegance and nerviness. Drinkable now but best in two or three years.
