Domaine Simon Bize et Fils has to be one of the best kept secrets in Burgundy today. Famed for producing wines with impressive capacity for cellaring, under the care of Chisa Bize the wines are also more dynamic and show greater aromatic detail. The Domaine has some of the oldest average vine age anywhere in the Cote d'Or, and Chisa practices her amalgam of organics and biodynamics coined as "Bize-dynamics". Yields are kept low, and winemaking utilises a high percentage of whole-cluster fermentation.

A cool and restrained nose grudgingly offers up notes of forest floor, humus, earth and fresh red pinot fruit aromas. The supple and relatively light weight flavors are utterly delicious and attractively energetic, all wrapped in a lingering finish that quickly firms up. This is lighter but attractive in its fashion. Drink 2025+.

The 2017 Savigny-lès-Beaune 1er Cru Les Serpentières offers up an attractive bouquet of sweet strawberries, orange rind and rose petal, followed by a medium-bodied, ample palate with melting tannins that are largely enveloped by its juicy core of fruit. While this site seems to require hot, dry vintages to deliver profundity, this is a charming rendition that will drink well out of the gates.

The 2017 Savigny-lès-Beaune Les Serpentières 1er Cru has the most complex bouquet from Bize this year, intense mineral notes suffusing the mainly red fruit, and hints of Japanese nori and a subtle marine influence developing with time. The palate is medium-bodied with fine tannin and a little chalky in texture, but turns supple toward the smooth, elegant finish. Bon vin! Drink 2021 - 2036.
