Domaine Simon Bize et Fils has to be one of the best kept secrets in Burgundy today. Famed for producing wines with impressive capacity for cellaring, under the care of Chisa Bize the wines are also more dynamic and show greater aromatic detail. The Domaine has some of the oldest average vine age anywhere in the Cote d'Or, and Chisa practices her amalgam of organics and biodynamics coined as "Bize-dynamics". Yields are kept low, and winemaking utilises a high percentage of whole-cluster fermentation.

Quite deep in colour with a dark red core, black tinged edges and a bright dark red hue. Blossoming from the glass are perfumed aromatics of violets, sour and red cherries, subtle clove, fresh herbs and faint forest floor notes. Light in body and possessing a fresh feel, an elegant mix of red and sour cherry fruits are carried by vibrant acidity with elements of forest floor, fresh herb infusions and spice also chiming in. Finely grained well integrated tannins with a refined and lively aftertaste.

This is aromatically cooler and a bit more restrained though not quite as complex with its elegant blend of red currant, violet, plum and soft earth hints. I very much like the silky mouth feel of the more obviously mineral-inflected flavors that deliver fine length on the mildly austere finale. This is presently less complex than the best in the range but the delivery is absolutely lovely and if more depth develops this could be excellent in time.

The 2017 Bourgogne Les Perrières is also excellent, wafting from the glass with a classic Bize bouquet of spicy plums, cherries and rose petals. On the palate, the wine is medium-bodied, ample and succulent, with fine chalky tannins and a subtly and mouthwateringly bitter finish.
