2017 Mitolo Jester Cabernet Sauvignon

The Jester Cabernet comprises 20% Amarone fruit, dried for approximately 7-8 weeks, following the Italian appassimento technique of drying grapes on racks. Apart from adding complexity to the final wine, this process also gives the mid palate a sensuous plushness.

Inky black core with a deep dark red black hue. Elevated blackcurrant aromas infused with black olive meld into cigar box, dried herbs and spice. Medium weighted with good richness, spicy red to black currant flavours intermingle with black olive, cigar box and dried herb elements. Sturdy tannins back the fruit leading into a long, slightly chewy and savoury aftertaste.
Cellar 5-6 years.
