Domaine Simon Bize et Fils has to be one of the best kept secrets in Burgundy today. Famed for producing wines with impressive capacity for cellaring, under the care of Chisa Bize the wines are also more dynamic and show greater aromatic detail. The Domaine has some of the oldest average vine age anywhere in the Cote d'Or, and Chisa practices her amalgam of organics and biodynamics coined as "Bize-dynamics". Yields are kept low, and winemaking utilises a high percentage of whole-cluster fermentation.

The 2016 Savigny-lès-Beaune 1er Cru Aux Fournaux was protected by cloud cover from the frost unlike the upper reaches of vineyard. It has an engaging, very pure and slightly floral bouquet with red cherries, bilberry and briary scents, a cold stone aroma tucked underneath. The palate is very harmonious with very fine tannin, the whole bunch lending a slight earthiness toward the finish that lingers. This is such an impressive wine in the context of the growing season. Drink 2020 - 2035.
