2016 Paxton Quandong Farm Shiraz

Certified bio-dynamic. 30% whole bunch with maturation taking place in French oak barriques (15% new). Totally opaque black dark purple colour with a dark purple hue. Aromas of blackberry, dark plum and liquorice are tinged by subtle smoky clove like notes with some meatiness and spicy pepper ensuing. Luscious blackberry and liquorice flavours fill the medium to full bodied palate with nuances of dark plum, subtle smoky clove like characters, fennel and pepper also present. There’s an elegant opulence to the mouthfeel with finely grained velvet like tannins. Long blackberry, dark plum, liquorice, smoky vanillin cedar, light dried clove, fennel and pepper aftertaste.
