Fermented in 35% new French oak barriques using wild yeast. Brilliant pale straw to straw colour with a watery hue. Nosing draws out aromas of ripe pears, apricots, dried honey and lemon butter with light spicy cashew end notes. Medium bodied, elegant and quite creamy in texture the palate sports a flavour profile of pears, apricot, dried honey and cashew followed by traces of lemon butter and subtle spice. Clean dry finish. Long aftertaste of dried pears, cashew, dried honey, lemon butter and spice.
Drink over the next 3-4 years.
