Highland Park continue to malt around 30% of its own supply themselves at a relatively high 30-40ppm. The remainder is sourced from Simpsons, unpeated. It explains why this distillate can go either way - quite smokey to almost indiscernibly peaty. Claxton's have matured this youthful expression in an STR barrique (Shave-Toasted & Re-charred). The process removes harsh tannins and breaks down chemical bonds such as lignin, celluloses and hemicelluloses, replacing them with sugars, vanilla and spice notes. They're the same kinds of casks that the likes of Kavalan and Cotswolds favour to infuse maximum flavour into young whiskies. 238 bottles at 57.8% Alc./Vol. Non chill filtered.
