The grapes for Stonier Chardonnay were selected from several long term vineyard suppliers for Stonier, centred near Merricks, Balnarring and Merricks North. Most of these vineyards are now in excess of 15-20 years old. The 2015 Stonier Chardonnay was fermented in French oak barriques and puncheons (10% new) with a total maturation period of 9 months. With the elevated acid levels resulting from the cool ripening, several batches from the coolest vineyards were allowed to undergo the acid-softening malo-lactic fermentation (approximately 35%), with the remaining portion withheld to preserve the lovely pure fruit flavours.

Bright pale straw colour with a watery hue. The nose reveals aromatics of ripe white peaches laced with dried honey and cashew followed by a hint of nougat and spice. Vibrant, yet texturally quite full with a slight creaminess that will build with time in the bottle, the palate features generous flavours of white peaches and ripe pears overlaid with lightly spiced dried honey characters, subtle cashew and spice. Clean dry finish with good acid balance. Medium to long aftertaste of white peaches, dried honey, subtle cashew and spice.
Drink over the next 3-4 years.
