Produced with 30% whole bunch inclusion and matured in French oak barrels of which 30% were new. Deep dark red colour with black tinged edges and a dark red hue. Fragrant aromas of ripe dark cherries, plum and anise laced with dried cloves are followed by smoky cedar and spice. Light to medium weight the palate has flavours of dark cherries and plums intermixed with a dash of sour cherries over vanillin cedar and spicy dried herb infusions. Dryish finish with slightly chalky tannins and fresh acidity. Aftertaste of dark and sour cherries, plum, dried herb infusions and spicy cedar.

Hand-picked, chilled overnight, 30% whole bunches, 70% whole berries wild yeast open-fermented for 14 days with hand-plunging, 7 days post-ferment maceration, matured in French oak (30% new) for 10 months. An instantaneously expressive bouquet of red cherry and plum, bracken and spice, leads with total assurance into the complex, but not the least heavy or aggressive, palate, freshened and extended by fresh acidity on the finish. '15 was a great pinot vintage in southern Vic.
