2015 Hentley Farm The Quintessential Shiraz Cabernet

Totally opaque black dark red colour with a dark red hue. Pronounced liquorice, blackberry and ripe blackcurrant aromas drift out of the glass intermixing with vanillin oak, faint scorched earth and spice. The palate delivers the goods boasting superb richness and concentration. Mouthfilling flavours of ripe blackberries, liquorice and blackcurrant flood the mouth underscored by vanillin cedar, subtle earth, dark chocolate and spice. The opulent mouthfeel largely obscuring the sturdy yet velvet like tannins. Excellent power concluding long with ripe blackberries, liquorice, blackcurrant, subtle earthy dark chocolate, vanillin cedar and spice.

A 60/40% blend, destemmed and crushed, 70% with 35 days on skins, 30% 8 days on skins, matured in French oak (30% new) for 12 months. The blackcurrant/cassis/herb notes of the cabernet unexpectedly come out on top of the blackberry and plum of the shiraz. This medium-bodied wine has been carefully handled in the winery during both the fermentation and maturation phases, emerging with absolutely perfect balance. Drink by 2035.
