A Jura-inspired vin jaune from Adelaide Hills. A light, Manzanilla sherry-style oxidative character and cashew nuttiness form the backbone of this unique wine style, with the deep florals of Savagnin adding lilt and prettiness.
100% Savagnin, fermented one month on skins. Three barrels transferred to a shed away from the winery and left to continue fermentation under a layer of flor yeast for nearly three years.
