2013 Fire Gully Shiraz
Fermented with a touch of Viognier and matured in French barriques for 12 months. Deep dark red colour with black tinged edges and a dark red hue. The subtlety scented nose displays aromas of dark and dried cherries, earthy dried meat like characters and spicy pepper. Medium bodied with a supple mouthfeel the palate possesses flavours of ripe dark cherries and liquorice over spicy vanillin cedar and earth with a peppery finish. Fine grained, velvet like tannins. Aftertaste of pepper, dark cherries, liquorice and earthy vanillin cedar.

Includes 4.4% viognier, hand-picked, chilled to 5 degrees C then hand-sorted and destemmed, cultured yeast, 60% in static fermenters and 12 days skin contact, 40% open fermenters with 12 days cold soak and 18 days skin contact, pressed to barrel at 4.5 baume, matured for 12 months in used French barriques. The crimson hue is very good, albeit light and clear; all the effort invested in the vinification has paid the appropriate dividends: this is a delicious, fresh, medium-bodied shiraz, lithe and silky, the floral bouquet setting the tone for the red fruits of the palate. Drink by 2028.
