2008 Signatory Vintage Dailuaine 16 Year Old Cask Strength Single Malt Scotch Whisky (700ml)

Another first-fill oloroso finish in Signatory's latest outturn, which is, coincidentally the same age as Diageo's official Flora & Fauna bottling, except this is cask strength. Dailuaine's robust distillery character is known to handle sherry maturations well, where it becomes big, boisterous and complex. The yield was 681 bottles at 57% Alc./Vol. Non chill filtered.

A lovely, integrated sherried dram with the oiliness of Dailuaine - nicked a point as there was a lingering bitterness towards the end of the taste/finish which undermined the rest of the dram. Nose: Warm, spicy, sherried notes - caramel, plums, black pepper, coexisting with a yesty, malty note. With time, fresh fruits and honey appears. Taste: A lovely oiliness develops in the mouth, then the maltiness, brown sugar, raisins and oak takes over. Finish: Walnuts, mild spiciness (black pepper), oak appears at the end.
