2007 Signatory Vintage Caol Ila 17 Year Old Cask Strength Single Malt Scotch Whisky (700ml)
Caol Ila is another distillery that seems to be quietly dropping off independent portfolios, most likely due to a change in Diageo's policies rather than by choice, as the quality is always high and the style is in demand. Cask #6 yielded 677 bottles from an oloroso sherry butt. Anticipate notes of ashy smoke, seashore, cured meats and a rich fruitiness wrapped up in an intense, peppery delivery. Think bacon-wrapped scallops! 57.7% Alc./Vol. Non chill filtered.
Other reviews... quite complex, strong with a strong cask strength, but definitely drinkable neat. Nose: Smoke, first like when smoking ham, then the hospital-like aroma comes into play. Nutty and with roasted notes. Afterwards, aromas of lemon emerge. There are also chocolate, leather, and cherries. Taste: Smoke – ham smoke. Cherries and leather, nutty again. Caramel and perhaps a hint of melon. Ham and chocolate again. Finish: Sherry and chocolate. - whiskybase.com
