Aged on yeast lees for over 30 months this sparkling pours with an excellent white frothy mousse that shows very good hold. Pale straw coloured base wine with pale gold edges. Exceptionally fine and very persistent bead. Delicate aromas of pear, yeast lees, a hint of citrus and baked bread. Palate flavours of pear and citrus are followed by some toasty yeast like characters with some nutty cashew making an appearance on the clean dry finish. Aftertaste of pear, citrus, toasty lees and cashew.
Drink over the next 3-4 years.
