Very deep crimson colour with deep crimson hue. Top note of leather, followed by earth. This is an old fashioned Shiraz – with end notes of blackberry and spice. The palate displays flavours of plum and spice followed by a hint of chocolate and cinnamon in the background. Fine dryish tannins. Aftertaste of cinnamon and black pepper with dry tannins persisting.

First tasted 12th February, 2008;

Very deep crimson colour with black mauve hue. Spicy top note followed by plum and vanilla, showing good varietal character. The palate is a touch tight, displaying flavours of black pepper and spice. Fine grained tannins Aftertaste of plum, black pepper and vanilla.

The 2005 Shiraz “Dry Bore” was aged for 18 months in new and used French and American oak. The wine is a saturated purple color offering up an alluring bouquet of violets, saddle leather, blackberry, and blueberry muffin. This leads to a stylish, racy Shiraz with a sense of elegance. Nicely balanced, it has generous ripe fruit, a smooth texture, good focus, and a long finish. Give it 2-3 years to fill out and drink it through 2020.
