This sparkling wine has been made using riper grapes as well as encouraging a wild yeast ferment. The base wine has been barrel aged and has gone through a malolactic ferment. The base wine has not been filtered. Moderate short lived mousse, moderate bead. Pale gold base wine. Developed nose with aroma of toast, yeast lees and biscuit. Creamy palate with nougat back palate flavour. Soft acidity. Aftertaste of nougat.
