A complex Australian Sparkling wine.

The mousse is impressive with good hold. Fine persistent bead. The base wine is quite deep, showing some maturity and contributing to the complexity of the wine. Aroma of yeast lees and biscuit showing good varietal characteristics. Creamy palate texture. Flavours of yeast lees and biscuit create a broader style of Sparkling wine. Long creamy aftertaste.

The wine is based on a blend of chardonnay, pinot noir and pinot meunier (in that order), partially aged in oak before being bottle fermented, spending three years on lees. Glints of gold run through the straw colour and introduce a palate with a rippling of stone fruit, ripe apple, red berry and spice flavours augmented by a touch of brioche, followed by a long, well-balanced finish.
