The Toolleen Vineyard is situated on the Western slope of Mount Camel in the Heathcote district. The soil is composed of that highly prized 500 million year old Cambrian earth. Approx 40 acres are planted to Cabernet Sauvignon and Shiraz of North facing slopes. The soil is well drained with greenstone rocks interspersed throughout, which makes it a bit rough on machinery but perfect for growing grapes. Water is applied judiciously throughout the growing season, only when necessary. Some areas of the vineyard which are on very deep Cambrian earth receive no water. Viticulturist Tom Krakowski manages the canopy very well, thus allowing the fruit to ripen fully without the stress that is sometimes associated with dryland farming.

A superbly structured Heathcote Shiraz which shows a touch firmer tannin structure than many of the other district’s wines, yet remains in perfect balance. Very deep crimson black colour with purple mauve hue. Aroma of spice, plum and violets which will gain further intensity with time. The palate is mouthfilling, with outstanding length and persistence. Flavours of spice, white and black pepper, blackberry and vanilla abound with just a touch of dark chocolate on the back palate. Very long aftertaste of black and white pepper.
