This wine displays the typical very high acid structure of young, unripe Hunter Semillon. The wine needs time - this is the only remedy for the acidity which softens to reveal a tertiary flavour profile. Bright straw colour – the nose is subdued with a hint of grassiness followed by a touch of confectionary and tropical fruit. The palate is dominated by the high acid structure with flavours of grassy lemon flavours evident, followed by a touch of confectionary on the back palate. Exceptionally high acid finish.
