SOIL
Light acid granite ground, on the right bank of the Rhône, in the foothills of the Massif Central. We own the parcel of Saint-Joseph, situated between Mauves and Tournon, which has given its name to the appellation.
VINIFICATION
On arrival at the cellars, the entire bunch is pressed. The must is racked by a cold decantation during the first 24 to 48 hours. The temperatures of fermentation are regulated by running water.
MATURING
Part of the wine is then put into oak casks (20%) while the rest remains in vats. Both wines are assembled before bottling.
TASTING
Colour : Pale yellow with greenish tint.
Nose :mineral, flint stone (granite characteristic), toasted aroma, with hints of nuts.
Palate : The first taste is direct and round, there is a floral and honeyed finish.
