Chateau Simon consists of 38 hectares of which 17 are devoted to the production of Chateau Simon. This property, like the famous Chateau Gillette, holds back older vintages of Sauternes, allowing the wines to gain depth and complexity. Since the botrytis does not affect the grapes in a uniform way, several picks are required at Chateau Simon, 4 to 5 passages are generally made, selecting only the best noble rot affected grapes. The young Sauternes is aged for 18 months in new casks.
The vineyard has been in the Dufour family for 6 generations, and is planted with 85% Semillon, 12% Sauvignon Blanc and 3% Muscadelle. Soils on the property vary from clay limestone, to deep gravel. The wines are highly regarded and display enormous complexity, whilst still achieving elegance and harmony.

Tasting Notes: Brilliant gold colour. Pronounced nose of honeyed raisins, and apricots. Rich luscious palate texture, with distinct flavours of apricot, honey and raisins. Dry finish, followed by a long honey and apricot aftertaste. Cellar 4-5 years.
