Kilchoman is remarkably contemporary by Scotch Whisky standards (production commenced in 2005), yet it’s most notable for its adherence to old fashioned methods. There’s justification for Kilchoman’s slogan of “Taking whisky back to it’s roots”. It is essentially a ‘farm distillery’, as many were in the early nineteenth century. Just about everything to do with whisky production happens on site. In the case of the 100% Islay release, even the barley is grown and malted by the distillery - highly unusual nowadays when most are either purchasing barley from around Scotland or importing the raw materials.

This, the second edition of the Kilchoman 100% Islay is a 50:50 vatting of three and four year old whisky matured in ex-Bourbon casks.

The only Islay distillery not on the coast — and the most westerly on the island — Kilchoman is reviving the tradition of farm distilling, and this limited edition release uses locally grown Optic barley malted at the distillery. Very creamy, with some stewed apple, green banana, and (when diluted) sponge cake mix. The smoke develops on the palate, adding an earthy note. Rich, with some clove and licorice on the finish.
