The "Heartwood" venture commenced in 1999 and represents a selection of casks, several containing some of Australia's oldest Tasmanian Whisky stocks, owned by Tim Duckett. The variety of barrel types include Bourbon and Australian Port and Sherry.

'Convict Unchained' which weighs in at a whopping 71.9% ABV, was matured in a Port cask, distilled May 2001 and bottled in November 2012.

Tasting note: [BATCH 1HH0613 tasted] Bright burnished brass / copper appearance. The heavy aroma prickles the nostrils as it oozes lazily out of the glass as though you’re waking a sleeping giant. The heady alcohol is accompanied by a subtle cheesey characteristic that alternates with sweeter scents of liquorice bullets, vanilla, dark chocolate and a vaguely fruity maraschino-like note. The palate detonates with an achingly intense alcoholic hit that almost eclipses the flavours of dried fruit and sweet spice. Finish is moderately bitter and dry with the spicy dried fruits persisting. Aftertaste is peppery with a subtle rubbery note. The sweeter dried fruit flavours return at the very end. Like the Convict Release bottling, when tasted the following day, this whisky came across better. A little bit of air seems to go a long way. 71.9% Alc./Vol.
