Tasting note: [Barrel 3 tasted from a 15ml sample] Distilled from a mash of 60% rye and 40% pale malt barley. Pale gold. Peppery / vapoury alcoholic lift blows off to reveal flashes of vanilla bean and caramel with drier notes of peppermint and shades of buttered rye toast. Delicate bittersweetness is followed by a delicious rush of vanilla malt. Subtle mint and hints of wood shavings at the finish with lingering black pepper. The malt and oak dominate. More like a heavy-weight Canadian than a traditional Kentuckian. 55% Alc./Vol. 259 bottles.
