Tasting note: A very lightly peated, triple distilled malt matured in French oak casks that previously held Shiraz, as well as x Madeira casks. Golden Promise barley is employed in the mash. Pours a slightly pale, medium amber / gold colour and issues frail scents of creamy soda, vanilla custard and hints at pineapple pudding. Lighter-styled, in the tradition of entry level Canadian ryes or Irish blends, this is graceful and silky in the mouth with vanilla wafer, light fruit’n’nut chocolate and gentle cinnamon / pepper warmth.
