Produced from predominately Chardonnay along with a small amount of Pinot Noir this blend is given 2 years bottle age on lees. Good white frothy mousse which dissipates to reveal a pale straw gold coloured base. Very fine bead showing excellent persistence. On the nose aromas of baked bread, citrus, subtle cashew, toast and yeast lees are present. Light and fresh the palate has flavours of citrus and baked bread over a background of toast and yeast lees. Clean crisp dry finish. Medium to long aftertaste of yeast lees, toast and baked bread. A very good aperitif style sparkling.

Produced from predominately Chardonnay grapes this wine spends a minimum of 2 years ageing on yeast lees. The wine pours with a creamy white mousse with good head and shows very good hold. Bright straw pale gold base wine with very persistent and exceptionally fine bead. Baked bread and yeast lees top notes are followed by some delicate cashew and biscuit aromas. The palate displays a very creamy texture with flavours of yeast lees, brioche and biscuit with a light citrus overlay. Clean crisp dry finish with aftertaste of yeast lees and citrus.

First Tasted: October 2004
Creamy mousse with medium to fine persistent bead. The base wine is straw colour with refined nose of yeast lees, a hint of freshly baked bread and biscuit. Creamy palate texture with very good length and persistence of flavour. Flavours of citrus over biscuit with clean finish, perfectly balanced, long aftertaste of biscuit and yeast lees.
