Rare Late-Harvest Nectar - Domaine Cauhape

Founded in 1980 when Henri Ramonteu began making wine on just one hectare of his family’s historic 16th-century farm, Domaine Cauhapé has grown into the undisputed flagship estate of Jurançon. Adored by top international sommeliers and featured on elite restaurant wine lists, yet remaining a hidden gem to most wine lovers, the 47-hectare property sits in the Pyrenean rain shadow, where warm föhn winds naturally concentrate the grapes on the vine without botrytis. Meticulously farmed and harvested entirely by hand through successive selective passes (tries) spanning October into January, Cauhapé crafts both vibrant dry whites and legendary late-harvest sweet wines that strike a breathtaking balance between exotic fruit purity and electric mountain acidity.

Ballet d'Octobre Jurancon

Crafted entirely in stainless steel from October-harvested Petit Manseng, this is Cauhapé's freshest and most approachable sweet wine. Short skin maceration and zero oak contact preserve a vibrant, citrus-led profile with a crisp sugar-acid balance that stays light on its feet.

Symphonie de Novembre Jurancon

Harvested in early November and fermented in neutral French oak barriques, this step up in concentration delivers a richer, more full-bodied texture. It bridges the gap between freshness and depth, balancing sweeter, candied-fruit expectations with subtle wood complexity.

Quintessence du Petit Manseng Jurancon

One of the estate's iconic prestige cuvées, this late-December harvest is made from vines whose stems were twisted to dry and concentrate the grapes on the vine, yielding a tiny 9 hl/ha aged for over two years in 100% new French oak. With 15+ years of bottle age, this 2010 vintage offers Sauternes-level richness and extraordinary length while retaining vibrant mountain acidity.

Quintessence du Petit Manseng Folie de Janvier Jurancon

Pushing late harvesting to its extreme, 'Folie de Janvier' is picked in the dead of winter at a microscopic 6 hl/ha yield and aged for two-plus years in 100% new oak. As the most intensely concentrated and highest-sugar bottling in the lineup (135 g/L RS), this mature 2010 is a rare, ultra-prestige experience built for collectors.
