A Yarra Valley Cabernet that shows ample fruit, a savoury elegance and impressive complexity for the price.
Sourced from high quality vineyards in Coldstream, Yarra Glen and Seville, this is a blend of 74% Cabernet Sauvignon and 26% Merlot matured for 15 months in French oak barrels. Totally opaque black dark red colour with a red to dark red hue. Lifted blackcurrant and mulberry scents are intertwined with gentle cigar box, dried herb, earthy black olive and spice notes. Elegant and refined, the medium bodied palate features red to black currant and mulberry fruits which morph into a spicy cedar, subtle earthy tobacco, black olive and dried herb background. Slightly grainy tannins with a savoury medium to long finish.
Drink over the next 4-5 years.

The attraction is obvious. The whiskies offer a good age statement for the price, with a nice auburn colour promising lots of spice and dried fruit flavours. First-fill oloroso sherry butt #901016 yielded 558 bottles at 59% Alc./Vol. Non chill filtered.

From first-fill oloroso butts, it’s a dram that's said to ooze sherried richness and structure, so the distillery character will likely be a bit buried. (No half measures from Signatory when it comes to sherry!) Expect chewy sherry-soaked fruits, cocoa nibs, spiced plum compote and old oak furniture. 57.1% Alc./Vol. Non chill filtered.
Other reviews... Nose: Very nice sweet forest berries. Later, the fresh raspberries really stood out to me. Taste: The perfect sweetness is balanced by the sharpness of the pepper (chilli). Caramel and cocoa. Gentle bitterness. A whiff of fruit this time plums, dates. Finish: Medium, warming alcohol. Sweet caramel note with oak and dark chocolate. - whiskybase.com
