Pale coloured, dry rosés akin to what the French call "Vin Gris" have become hugely popular, usually enjoyed with Mediterranean dishes like grilled fish, tian (a cold vegetable flan) and salads, but also as an aperitif with finger foods. Made as a "Rose de presse" (juice straight off the press), the grapes are pressed rather than macerated (as is the case in a "Rose de Saignee"). Grenache, Cinsault and Cabernet are typically used. Following the lead of Southern France, Australian winemakers are responding with affordable, fresh wines of high quality.
