Sister distillery to the famous Glenfiddich, Balvenie lies at the heart of Scotch whisky country in the Scottish Highlands. In early 1892 work began to convert the eighteenth century mansion into a distillery. The building took fourteen months to complete with the first distillation taking place on 1st May, 1893. Little has altered over the years and the Balvenie distillery is still firmly rooted in the past. The peat used is hand cut locally, dried and seasoned before being used to fuel the malt kiln. Attached to the distillery is a one thousand acre farm, Balvenie Mains, which provides the barley used to make the whisky. Balvenie has four pairs of stills which are taller than those of Glenfiddich, so the whisky is still different in style despite the two distilleries proximity to one another. Casks from various parts of the world are employed: Bourbon barrels of American oak; butts made of European oak bought from the Bodegas of Spain in which rich oloroso sherries have been matured, and 'Port pipes' from Portugal.

Tasting Note: Luxurious and honey like, Balvenie is often enjoyed as an after dinner treat. The pale gold colour belies the true complexity of this malt. Its aged oak, honeyed bouquet dominates on the nose. On the palate, the honey character continues through to a big, round orange-honey climax. The finish is dry, long and warming. Remarkably mellow. A most distinctive and interesting malt.
