Mineral is unsurprisingly the most salty, briny, and mineral inflected wine in the Argapart range. It is a blend of two old vine Grand Cru Chardonnay parcels on the border of Avize and Cramant, and spends 5 years on lees. Disgorged in February 2017 with a dosage of 5g/l.

Half of this is from Les Champs Boutons in Avize and fermented in tank, while the other half is from similar terroir in Bionnes and Buzons in Cramant, just 100 meters away, and vinified in barrel. It feels unusually concentrated and ripe for the vintage, showing a subtle richness and depth on the palate, yet it’s held within a sleekly chalky frame, its salty, briny minerality increasing in intensity on the finish. It’s a superb edition of this cuvée, warranting at least another five to six years of post-disgorgement age to allow it to show its best.
