Finished for 9 months in a cask previously used for late picked Viognier dessert wine.
Bright copper / brass colour. First nosings reveal a faint shellac note; further aeration releases cocoa and sweet malt followed by a sudden fruit pick up that exhudes dense aromas of stewed apricot, clove, honey and cigar box (is this Cognac or whisky?) Initially sweet, an enormous burst of honey and dried apricot is counterpointed by fine, drying tannins and spice. The malt finally makes itself apparent on the back palate, combining with manuka honey and stewed apricot - again the overall delivery is like a marriage of young Cognac and super Sherried whisky. Terrific poise at high ABV. Concludes with long strides as the aftertaste repeats the palate flavours and just goes on and on. A uniquely Australian follow up to the previous release (only this time there’s less to sell) 330 bottles are being strictly allocated. Cask 970330 (French Oak). 50.8% Alc./Vol.
