Produced as early as 1532, Cachaça is considered a national drink amongst Brazilians who consume an astonishing two billion litres a year. Added to this figure are annual exports of 9.3 million litres which ranks Chacaça as the fourth largest selling spirit in the world. It is the basis of the Caipirinha (pronounced Kaay-peer-REEN-ya), which became one of the world’s most popular cocktails towards the end of the millennium leading to a world Cachaça shortage. The spirit has been in demand in Australia for some time with many bars using white rum as an inferior substitute.

While Cachaça is also a sugar cane distillate, and so similar to white rum, it is not distilled from molasses but from the juice of unrefined sugar cane of which only the first pressings are used. A maturation process of several weeks in wooden vats allows the flavour to soften, making the taste of Cachaça lighter and smoother than that of many white rums.

The Ypióca company is the largest estate-producer of cachaça with five modern distilleries and 100% of its sugar cane originating from its own estates. Ypioca Prata is aged for at least 2 years in Brazilian Walnut wood barrels, creating a soft and agreeably sweet spirit.

Other Reviews: Clear with a faint straw cast. Cane stalk, confectioner's sugar, banana leaf, and peppery spice aromas. A soft, satiny entry leads to a dryish medium-to-full body of sweet cream, talc, white pepper, and mineral flavors. Finishes with creamy, spicy green banana and wet stone fade. A very nice mixer for caipirinhas.
