This wine is even more extraordinary than the Amontillado, in that its origins date back over 60 years. The wine was originally blended from old wood matured Sherries, old fortified sweet white material and paxarette*.*PAXARETTE - also known as PAJARETTE was the name of a popular desert wine in England in the 18th Century. The name itself is derived from a Monastery and vineyards located near Arcos de la Frontera. Paxarette refers to the name of a sweet condensed vino de colour wine made usually from Pedro Ximenez grapes, and finished by mixing the wine with essence (called arrope or sancocho), which are produced by boiling must down to a fifth and a third respectively.Made from Pedro Ximenez and Palomino grapes. Magnificent light sienna brown colour, with distinct green olive rim. Magnificent nose showing complexity with intense aroma of caramel, spice, hazelnut with powerful rancio overtones. The palate displays superb depth and complexity, but without quite the same power and complexity of the Amontillado. Flavours of caramel and molasses over a very strong spice and rancio background. Medium dry. Perfect balance with very long dry aftertaste of raisins and caramel. A wonderful experience. Stocks are limited. (750ml bottle).
