This white grain spirit (usually made from potatoes) into which cumin or caraway seeds have been infused, is reputed to have great digestive powers and the Dutch have cultivated this wild herb, with its big head of tiny flowers, since the Middle Ages. The earliest recorded caraway liqueur was made by Lucas Bols in his small Amsterdam distillery in 1575. Bols was a man of dedicated talent who bought a variety of skills to his trade. He gathered from many regions natural ingredients through which he passed alcoholic vapours to produce new and subtle scents. To this day, the worlds finest Kümmels are produced in Holland.
